I am about to order a mill from. If I wish to grind flour to make “white” flour which seed should I order as I presume organic whole wheat seed makes wholemeal flour?
Answer:
Ah, all whole grains make wholemeal flour. When stoneground, the flour must be sifted to remove the bran, leaving stoneground white flour (which still contains the highly nutritious wheat germ which gives the white flour an off-white, slightly yellow colour and nutty flavour).
We do an optional sifter from komo that fits on top of their mills see the Komo Sifter.
Also, traditional hand-sieves with a choice of screens depending on how much of the bran you want to remove can be found at these sieves for milled flour.
